In Mugello, the culinary and hospitable tradition has its roots in the Middle Ages. Each settlement along the main transit routes, once made safe, was transformed into a lively “market”, a place of exchange for agricultural and handicraft products. From here a myriad of “Innkeepers” arose, offering night shelter and various services, from simple stables to complete hospitality with table and wine, or more modest meals such as soup and tripe.
Next to the hotels, there were the more simple “Osterias”, where you could eat and sleep, and the “Taverns”, full of food and wine but without accommodation. Everything was regulated by strict statutory rules to maintain order and decorum, for example forbidding setting up tables on the street and attracting overly intrusive customers.
From this tradition, Mugello has inherited a few but significant dishes, characterized by genuine flavors and traditional condiments, immune from the richest and most invasive culinary fashions.
